Fresh yeast can be frozen. Crumble 12g into 30g of bread flour and mix it up into a dry crumbly mix and then put into a small plastic bag and place in the freezer. When you want to use the yeast, mix one bag with 100ml of water and a very small pinch of sugar and set aside to start working. As it has been frozen it may take slightly longer.
